Dissertation note: Thesis (BS Food Technology) -- University of the Philippines Mindanao, 2003 Abstract: The practicum was conducted from April 15 to May 22, 2002 at Swift Dressing Plant. The student was allowed to observe and work at different areas and processing lines of the plant. These included receiving, hanging, slaughtering, scalding, eviscerating, finishing, sorting, chilling, packaging and issuance of the processed chickens. She was also given the opportunity to visit poultry farms in order to observe inspections done by Swift personnel in the area. Lectures and interviews about the different plant practices and guidelines were also conducted during the practicum. The problems that were encountered during the duration of the practicum were determined and recommendations in overcoming these problems were presented.
